Seth's Tofurky Stew :

Serves: 4

Ingredients:

1 Onion
3 cloves Garlic
4 cups vegetable broth
1 cup Tofurky cubes (can use more if you want)
1 cup cubed potatoes
6 oz frozen corn (can used canned corn too)
1 tsp fresh thyme
1 14 oz. tub Tofurky Gravy, or 14 oz of your own gravy

Directions:

Sautee onion and garlic until translucent. Add thyme. Add vegetable broth and then potatoes. Bring to a boil. After reaching a boil, turn down to a simmer. Add Tofurky Roast cubes, corn and gravy. Cook until potatoes are tender, about 40 minutes. Once potatoes are tender, serve in large bowl. Delicious with a nice loaf of fresh bread.

Note: you can be very creative with the recipe and add additional ingredients as you wish. Be sure to adjust the amount of vegetable broth used so your stew stays nice and juicy.
