TEMPEH TACOS

Ingredients:

1 small onion minced
2 cloves garlic minced
2 T extra virgin olive oil
8 ounces Turtle Island Tempeh – grated on a cheese grater
½ cup water or vegetable broth
1 teaspoon dried oregano
2 T taco seasoning
½ teaspoon ground red pepper (if desired)

  1. Heat the oil on medium high and add the onion.
  2. Cook, stirring often, until the onion starts to soften.
  3. Add garlic and cook for another minute or two.
  4. Add the grated tempeh and cook, stirring often, about five minutes. Tempeh should get lightly browned.
  5. Add the water or vegetable broth and reduce hit to low.
  6. Add the oregano, taco seasoning and ground red pepper. Stir well.
  7. Heat until most of the liquid has evaporated. Serve in taco shells or fajitas.
