Tofurky Sweet Italian Sausage Bake

½ cup chopped onion
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
1-½ cup julienne zucchini
olive oil for sauté
1 garlic clove—minced
1 package Tofurky Sweet Italian Sausage
2 cans Italian-style stewed tomatoes (minced)
1 package whole-wheat corkscrew pasta (or your preference of short cut pasta)
2 cups shredded Mozzarella cheese

Bring water to a boil and prepare pasta as directed. While pasta is cooking, sauté onion, bell pepper, zucchini, garlic and Tofurky Sweet Italian Sausage in olive oil. Once pasta is ready, remove from heat and drain. In large casserole dish, add the ½ cup of pasta and sauté mixture and 1 can of stewed tomatoes. Add one cup of cheese to the first layer. Then top with the remaining pasta and the sauce mixture. Add the other can of stewed tomatoes top with the remaining cheese. Bake until cheese is nice and bubbly. Remove from oven and serve. Sprinkle with Parmesan cheese.
