Tofurky Kielbasa, Beans & Vegetable Soup

1 cup dry pinto beans
1 large onion--chopped
2 stalks celery--cut
1/3 cup dehydrated vegetables
2 carrots--cut in small pieces
1/3 cup brown and long grain rice
3 Tofurky Kielbasa Sausages—finely chopped
Salt and Pepper to taste

  • Soak beans for one hour in boiling water, drain beans and place back in pot.
  • Add chopped onions, celery, carrots and 2 quarts of water to bean pot.
  • Bring to boil, lower heat to simmer, cover pot and cook for 2.5 hours.
  • Add dehydrated vegetables and rice and cook 30 minutes.
  • Add finely chopped Tofurky Kielbasa Sausages to pot, simmer 20 minutes and serve.

Yummm. This is a full meal
