1 cup dry pinto beans
1 large onion--chopped
2 stalks celery--cut
1/3 cup dehydrated vegetables
2 carrots--cut in small pieces
1/3 cup brown and long grain rice
3 Tofurky Kielbasa Sausages—finely chopped
Salt and Pepper to taste
Soak beans for one hour in boiling water, drain beans and place back in pot.
Add chopped onions, celery, carrots and 2 quarts of water to bean pot.
Bring to boil, lower heat to simmer, cover pot and cook for 2.5 hours.
Add dehydrated vegetables and rice and cook 30 minutes.
Add finely chopped Tofurky Kielbasa Sausages to pot, simmer 20 minutes and serve.
